Charboiled Oysters: Heat a grill or grill pan over high heat. Place a dozen shucked oysters on the grill, and cook for 2-3 minutes on each side, or until the oysters are slightly charred and just starting to curl at the edges. Serve immediately with your favorite dipping sauce.
Oyster Gumbo: In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add 1 diced onion, 1 diced bell pepper, and 2 stalks of celery, and cook until the vegetables are soft. Stir in 1 pound of peeled and deveined shrimp, 1 pound of lump crab meat, and a dozen shucked oysters. Add in 2 cups of seafood stock and 2 cups of tomato sauce, and bring the mixture to a boil. Stir in 1 cup of uncooked white rice, and reduce the heat to low. Simmer the gumbo for 20-30 minutes, or until the rice is tender and the seafood is cooked through.
