Here are some general guidelines for cooking a whole-skinned alligator.

    Start with:

    • Alligator is a lean meat so you want to make sure you are keeping it moist.

    • Brine or marinate the alligator overnight.

    • Season the alligator any seasoning can be used (we have several to choose from on our site). You can coat the alligator with butter or a basting spray to help the seasoning set.  (Wrapping the alligator in bacon is an option bacon fat helps keep it moist while cooking)

    • Preheat your grill to medium-high heat (250-275 degrees) and lightly oil the grates.

    • Place the alligator on the grill and cook for about 2-4 hours, or until the meat is cooked through and lightly charred. (Cooking time will depend on the type of grill you are using and the size of the alligator.

    • To ensure that the alligator is cooked evenly, use a meat thermometer to check the internal temperature of the meat. The alligator is done when the internal temperature reaches 165 degrees Fahrenheit.
