Product Usage Instructions: You’ll need: Cajun’s Choice Jambalaya Seasoning Mix, 1 1/2 lb. boneless chicken (cut into bite-sized pieces) and/or medium uncooked, cleaned shrimp, 1 lb. smoked sausage, sliced (Kielbasa works well), 2 cups chopped onion, 1 cup chopped celery, 1 cup chopped bell pepper, 4 cups chicken broth, (1) 15 oz. can diced tomatoes, 2 cups long grain rice (uncooked) Brown sausage and chicken in 6-8 quart pot (if needed, use 2 tablespoons butter or olive oil to prevent the chicken from sticking). Remove meat from pot and set aside. Drain off all but about 2 tablespoons of drippings, add vegetables, and sauté on medium heat for 15 minutes. Return sausage and chicken to the pot, and add broth, tomatoes, and Jambalaya Seasonings Mix. Bring to a boil. Add uncooked rice. Cover and simmer for 5 minutes. Stir well. Cover and cook over low heat for an additional 45 minutes. If using shrimp, stir in during the last 15 minutes of cooking. Serves 6-8. The leftovers are great in the microwave.
