    "Blackened" fish is a relative newcomer to Cajun cuisine but this flavor-rich recipe caught on like wild fire. Our medley of red, black and white peppers with oregano and onion is moderate in heat by Louisiana standards and is relatively low in salt. Our Blackened Seasoning can be used as a secret flavoring for everything from stuffing's to casseroles to pizza. You'll find it really adds zip to a barbecue too.

    Ingredients: All Natural Spices (Including Paprika, Red, Black , White Peppers, Oregano), Salt, Onion and Garlic.

    Cajun's Choice Blackened Seasoning

    4 medium size fish fillets

    2 tablespoons vegetable oil

    2 tablespoons unsalted butter

    2 cups sliced mushrooms

    2 cloves minced garlic

    1/5 cup chopped green onions

    1/2lb uncooked, cleaned small shrimp

    1 teaspoons Cajun's Choice Creole Seasoning

    1/4 cup white wine

    Generously sprinkle Cajun's Choice Blackened Seasoning on fish fillets.  Heat vegetable oil in skillet. Cook fillets about 2 minutes per side until fish begins to flake when touched with a fork.  Remove from heat to warm dish.  While fish is cooking, melt butter in a medium skillet.  Add mushrooms, garlic, and onions.  Cook about 5 minutes over med-high heat until wilted.  Stir in shrimp and Cajun's Choice Creole Seasoning.  Sauté 3 to 4 minutes.  Add wine and cook until liquid reduces slightly.  Serve this mixture over fish.  This dish is excellent served with rice pilaf and/or fresh vegetables.
